Susnna is a PhD student in the TeCSBi (Convergent Technologies for Biomolecular Systems) program at the University of Milano-Bicocca, Italy. I hold a Bachelor’s degree in Food Science and Technology and a Master’s degree in Human Nutrition from the University of Milan. After graduation, I received a research scholarship in food microbiology, focusing on probiotic bacteria and contributing to two publications as first and co-first author. My current research focuses on fermented foods, particularly on kombucha microbial communities, their evolution during fermentation under different substrates, and the characterization of yeast strains for their potential health-promoting properties.
